Spinach and Broccoli Saag

This recipe aired during our March 10 episode.

Combine the following ingredients into an Instapot:

  • 1 broccoli head

  • 6-9 handfuls of washed spinach

  • 6-7 halved large tomatoes

  • 1-2 chilies

  • 1/2 cup water

  • 1 tsp salt

Heat for 5 minutes on high pressure. Then process in food processor till smooth. Next, saute the following ingredients till browned:

  • 1 onion minced

  • 1 tsp salt

  • 1 tbs ghee / butter / olive oil

Add the following ingredients to the onion mixture and cook until well absorbed:

  • 1 tsp cumin seeds

  • 1/8 tsp asafetida

  • 1 tsp tumeric

  • 2 tsp minced garlic

  • 5 tsp minced ginger

  • red chili and salt to taste

Mix greens and onion mixture. Add salt and chili to taste. Optional: Add paneer cubed or tofu cubed.
